Total Time: 55 minutes

Ingredients

  • 12 lasagna noodles, cooked al dente
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, finely chopped
  • 3 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • ½ cup grated Parmesan cheese
  • 1 egg
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 cups marinara sauce
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish with cooking spray.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until softened, about 3 minutes.
  3. Add garlic and mushrooms, cooking until mushrooms release their moisture and become tender, about 5 minutes.
  4. Stir in chopped spinach and cook until wilted. Remove from heat and let cool slightly.
  5. In a mixing bowl, combine ricotta cheese, ½ cup mozzarella, Parmesan, egg, Italian seasoning, salt, and pepper. Stir in the cooled mushroom-spinach mixture.
  6. Spread 1 cup of marinara sauce in the bottom of the prepared baking dish.
  7. Lay out the cooked lasagna noodles and spread an even layer of the ricotta mixture over each one.
  8. Roll up each noodle and place seam-side down in the baking dish.
  9. Pour the remaining marinara sauce over the rolls and sprinkle with the remaining mozzarella cheese.
  10. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until the cheese is bubbly and golden.
  11. Garnish with fresh basil or parsley before serving.

Tips & Variations

  • Add red pepper flakes for a little heat.
  • Use whole wheat or gluten-free lasagna noodles for a healthier option.
  • For a creamy twist, mix a bit of Alfredo sauce into the ricotta filling.
